Baked Sweet Potato with Maple & Ghee

- 2 or 4 large or small sweets potatoes peeled (Vata - - Pitta - Kapha +)
- 2 tsp. ghee Vata - Pitta - - Kapha +
- 2 tsp. maple syrup Vata - - Pitta - Kapha +
- 1/4 tsp. salt Vata 0 Pitta - Kapha +
- 1/2 cup boiling water Vata 0 Pitta - Kapha +
- 2-3 sage leaves chopped (Vata + Pitta - - Kapha - -)
- 4-5 sprigs thyme Vata 0 Pitta + Kapha - -
- 1 sprig rosemary Vata 0 Pitta + Kapha - -
Quarter the sweet potato, lengthwise.
Mix the ghee, maple, salt, herbs and water and rub the mixture on the sweet potatoes.
Bake until tender.
