Beetroot, Carrot & Walnut Salad

- 3 carrots peeled and roughly grated (Vata + Pitta - Kapha -)
- 1 raw beetroot peeled and roughly grated (Vata 0 Pitta + Kapha - -)
- 2 stalks celery leaves included, finely sliced (Vata - Pitta - - Kapha -)
- 5 chives chopped (Vata - Pitta + Kapha - -)
- Handful of walnuts slightly roasted and roughly chopped (Vata - Pitta + Kapha 0)
- 2 Tbs. olive oil Vata - - Pitta + Kapha +
- 1 tsp. mustard Vata - Pitta ++ Kapha - -
- 1 tsp. honey Vata + Pitta - Kapha -
- Juice from 1/2 a lemon Vata - - Pitta + Kapha -
- 1 garlic clove crushed (Vata - - Pitta ++ Kapha 0)
- Salt and pepper to taste
Mix the grated vegetables and chopped greens in a bowl.
Separately stir well the olive oil, mustard, honey, lemon juice and garlic.
Season with salt and pepper.
Pour the dressing on the salad and mix well. Before serving, garnish withwalnuts.
