Beetroot, Carrot & Walnut Salad

Ingredients
  

  • 3 carrots peeled and roughly grated (Vata + Pitta - Kapha -)
  • 1 raw beetroot peeled and roughly grated (Vata 0 Pitta + Kapha - -)
  • 2 stalks celery leaves included, finely sliced (Vata - Pitta - - Kapha -)
  • 5 chives chopped (Vata - Pitta + Kapha - -)
  • Handful of walnuts slightly roasted and roughly chopped (Vata - Pitta + Kapha 0)
  • 2 Tbs. olive oil Vata - - Pitta + Kapha +
  • 1 tsp. mustard Vata - Pitta ++ Kapha - -
  • 1 tsp. honey Vata + Pitta - Kapha -
  • Juice from 1/2 a lemon Vata - - Pitta + Kapha -
  • 1 garlic clove crushed (Vata - - Pitta ++ Kapha 0)
  • Salt and pepper to taste

Instructions
 

  • Mix the grated vegetables and chopped greens in a bowl.
  • Separately stir well the olive oil, mustard, honey, lemon juice and garlic.
  • Season with salt and pepper.
  • Pour the dressing on the salad and mix well. Before serving, garnish withwalnuts.
