Ingredients
  

  • 1/2 cup pearl barley Vata ++ Pitta - - Kapha - -
  • 1.5 cups water Vata 0 Pitta - Kapha +
  • Salt to taste Vata - - Pitta 0 Kapha +
  • 1/2 cup parsley chopped (Vata 0 Pitta 0 Kapha - -)
  • 5-6 chives chopped (Vata - Pitta + Kapha - -)
  • 1 small cucumber thinly sliced (Vata + Pitta - - Kapha ++)
  • 1/2 bell pepper thinly sliced (Vata ++ Pitta - - Kapha - -)
  • 1/4 cup mint leaves chopped (Vata + Pitta - - Kapha -)

For the dressing:

  • 3 Tbs. olive oil Vata - - Pitta + Kapha +
  • 2 Tbs. fresh lemon juice Vata - - Pitta + Kapha -
  • 1 garlic clove crushed (Vata - - Pitta ++ Kapha 0)
  • Salt Vata - - Pitta 0 Kapha +

Instructions
 

  • Cook the barely in 1.5 cups of water, until water is fully absorbed and the barely is soft.
  • Mix the ingredients of the dressing, pour on the pearl barley, mix well and let cool.
  • Mix the barley with the cucumber, bell pepper, parsley, chives and mint.
