- 1/2 cup pearl barley Vata ++ Pitta - - Kapha - -
- 1.5 cups water Vata 0 Pitta - Kapha +
- Salt to taste Vata - - Pitta 0 Kapha +
- 1/2 cup parsley chopped (Vata 0 Pitta 0 Kapha - -)
- 5-6 chives chopped (Vata - Pitta + Kapha - -)
- 1 small cucumber thinly sliced (Vata + Pitta - - Kapha ++)
- 1/2 bell pepper thinly sliced (Vata ++ Pitta - - Kapha - -)
- 1/4 cup mint leaves chopped (Vata + Pitta - - Kapha -)
For the dressing:
- 3 Tbs. olive oil Vata - - Pitta + Kapha +
- 2 Tbs. fresh lemon juice Vata - - Pitta + Kapha -
- 1 garlic clove crushed (Vata - - Pitta ++ Kapha 0)
- Salt Vata - - Pitta 0 Kapha +
Cook the barely in 1.5 cups of water, until water is fully absorbed and the barely is soft.
Mix the ingredients of the dressing, pour on the pearl barley, mix well and let cool.
Mix the barley with the cucumber, bell pepper, parsley, chives and mint.
