Quinoa & Pomegranate Salad

Ingredients
  

  • 1/2 cup quinoa Vata + Pitta - - Kapha -
  • 1 cup water Vata 0 Pitta - Kapha +
  • 1 medium carrot grated (Vata + Pitta - Kapha -)
  • 1 small onion Vata - - Pitta + Kapha -
  • 1/4 bunch parsley Vata 0 Pitta 0 Kapha - -
  • 1/4 bunch coriander Vata + Pitta - - Kapha -
  • 5-6 chives Vata - Pitta + Kapha - -
  • 2-3 stems mint leaves only (Vata 0 Pitta - Kapha - -)
  • 1 stalk celery leaves removed (Vata - Pitta - - Kapha -)
  • 1/2 cup pomegranate seeds Vata - Pitta - Kapha -
  • Handful of almonds roasted and chopped (Vata - - Pitta - - Kapha +)
  • 1/4 tsp. salt Vata - - Pitta 0 Kapha +
  • Juice form 1/2 a lemon Vata - - Pitta + Kapha -
  • 3 Tbs. olive oil Vata - - Pitta + Kapha +

Instructions
 

  • Put the quinoa in a small cooking pot. Add 1 cup of water, bring to boil, lower the flame, cover and cook until water is absorbed.
  • Finely chop all the ingredients and mix with the pomegranate seeds and quinoa.
  • Before serving season with salt, olive oil and lemon juice to taste.

Notes

Optional additions: For Pitta: omit the onion
