Wild Rice with Sweet Potatoes

Ingredients
  

  • 2 sweet potatoes sliced to thick slices (Vata - - Pitta - Kapha +)
  • 3 Tbs. olive oil Vata - - Pitta + Kapha +
  • 1 1/4 tsp. salt Vata - - Pitta 0 Kapha +
  • 1/4 tsp. black pepper Vata - Pitta + Kapha - -
  • 1/4 tsp. turmeric Vata + Pitta - Kapha - -
  • 2 cups wild rice washed and strained (Vata 0 Pitta - Kapha 0)
  • 4 cups water Vata 0 Pitta - Kapha +

Instructions
 

  • Heat the oil in a cooking pot. Add the sweet potato slices, 1/4 tsp. salt, turmeric and black pepper and fry on high flame for 3-5 minutes, until the sweet potato are roasted and caramelized.
  • Add 2 cups of rice and mix.
  • Pour 4 cups of water and bring to boil.
  • Add 1 tsp. salt, lower the flame and cover.
  • Simmer for 30 minutes until water is fully absorbed.
  • Close the flame and leave covered for 5 more minutes.

Notes

Optional additions:
For Vata: Use basmati rice.
For kapha: Use brown basmati rice.
