Oatmeal, Zucchini & Feta Omelet

Ingredients

  • 1-2 free range eggs Vata - - Pitta + Kapha +
  • 1/2 cup instant oatmeal Vata - - Pitta 0 Kapha +
  • 1/4 cup water Vata 0 Pitta - Kapha +
  • Handful of parsley chopped (Vata 0 Pitta 0 Kapha - -)
  • Handful of basil chopped (Vata - Pitta + Kapha - -)
  • 1-2 Tbs. feta cheese grated (Vata - - Pitta + Kapha ++)
  • 1/2 zucchini grated (Vata 0 Pitta - - Kapha 0)
  • 1 Tbs. ghee for frying (Vata - Pitta - - Kapha +)
  • 1 tsp. whole grain Dijon mustard Vata - Pitta ++ Kapha - -
  • 1/4 tsp. cumin Vata - Pitta + Kapha -
  • Salt & pepper to taste

Instructions

  • Beat the eggs and add the rest of the ingredients, except for the ghee.
  • Heat the ghee in a skillet, pour the batter and flatten to a large omelet.
  • Lower the flame and cover.
  • After a few minutes flip and fry the other side for several minutes, until golden.

Notes

Optional additions:
For Pitta: less mustard and more greens.
For Vata & Pitta: you can make a sweet version by using a grated sweet potato, raisins and dates.
For Vata: add grated sweet potato.
For Kapha: add lots of greens and spices like turmeric and oregano.
