Instructions
Put the quinoa in a small cooking pot. Add 1 cup of water, bring to boil, lower the flame, cover and cook until water is absorbed.
Finely chop all the ingredients and mix with the pomegranate seeds and quinoa.
Before serving season with salt, olive oil and lemon juice to taste.
Notes
Optional additions: For Pitta: omit the onion
