Tapioca Pudding
Ingredients
- 1/2 cup tapioca pearls Vata - Pitta - - Kapha ++
- 5 cups coconut milk Vata - Pitta - - Kapha ++
- 1/4 tsp. salt Vata - - Pitta 0 Kapha +
- 1 Tbs. maple syrup Vata - - Pitta - Kapha +
- 1/2 tsp. vanilla extract Vata - Pitta - - Kapha +
- Pinch clove ground (Vata + Pitta - Kapha -)
- Pinch cinnamon Vata - Pitta + Kapha - -
- Handful of almonds peeled, for garnish (Vata - - Pitta - - Kapha +)
Instructions
- Place the tapioca pearls in a large cooking pot with a thick bottom. Add the
- coconut milk and soak for an hour.
- Add the salt and maple syrup and cook on a medium flame while constantly
- stirring, for 15 minutes, until almost boiling.
- Lower the flame as much as possible and cook for 20 more minutes or until
- the pearls become transparent and the pudding thickens. Add the vanilla
- extract and mix well.
- Serve warm or cold and garnish with almonds, cinnamon and clove.
Notes
Soaking the tapioca in milk is required since tapioca tends to easily burn.
Pay close attention while cooking and mix often to avoid sticking to the bottom.
Optional additions: By adding a little cocoa powder, the tapioca pudding can turn to chocolate pudding.
