Oatmeal, Coconut & Chocolate Chip Cookies

- 3 cups instant oats Vata - - Pitta 0 Kapha +
- 1 cup 70% whole wheat flour Vata - Pitta - Kapha ++
- 1/4 cup coconut sugar or cane sugar Vata – Pitta - - Kapha ++
- 1/2 cup chocolate chips Vata - Pitta - Kapha ++
- 10 / 0.35 gr. / oz. baking powder Vata ++ Pitta 0 Kapha -
- 250 / 0.55 gr. / lb. melted butter Vata - Pitta - - Kapha ++
- 2 eggs Vata - - Pitta + Kapha +
Mix the dry ingredients in a bowl.
Add the butter and eggs and mix well.
Flatten and tighten the mixture on a baking dish with a baking sheet.
In a preheated oven, bake for 20-30 minutes at 180 °C/356 °F, until browned in the corners.
After cooling, cut to squares and keep in a sealed container.
