Pearl Barley & Greens Salad with Raisons & Almonds

Ingredients
  

  • 1/2 cup pearl barley Vata ++ Pitta - - Kapha - -
  • 1.5 cups of water Vata 0 Pitta - Kapha +
  • Handful of parsley chopped (Vata 0 Pitta 0 Kapha - -)
  • Handful of coriander chopped (Vata + Pitta - - Kapha -)
  • 1 stalk celery cut to small cubes (Vata – Pitta - - Kapha -)
  • 1/4 cup small black raisons possible to replace with unsweetened cranberries (Vata - Pitta - Kapha 0)
  • 1/4 cup sliced almonds roasted until golden (Vata - - Pitta - - Kapha +)
  • Juice from 1/2 a lemon + some lemon zest Vata - - Pitta + Kapha -
  • 4 Tbs. olive oil Vata - - Pitta + Kapha +
  • Salt Vata - - Pitta 0 Kapha +
  • Black pepper ground (Vata - Pitta + Kapha - -)

Instructions
 

  • Cook the barley in 1.5 cups of water, until water is absorbed and the barley is soft.
  • Mix in a bowl the cooked barley with the rest of the ingredients, season to taste and serve.

Notes

Optional additions: For Kapha: replace the almonds with pumpkin seeds.
