Pearl Barley & Greens Salad with Raisons & Almonds

- Handful of parsley chopped (Vata 0 Pitta 0 Kapha - -)
- Handful of coriander chopped (Vata + Pitta - - Kapha -)
- 1 stalk celery cut to small cubes (Vata – Pitta - - Kapha -)
- 1/4 cup small black raisons possible to replace with unsweetened cranberries (Vata - Pitta - Kapha 0)
- 1/4 cup sliced almonds roasted until golden (Vata - - Pitta - - Kapha +)
- Juice from 1/2 a lemon + some lemon zest Vata - - Pitta + Kapha -
- 4 Tbs. olive oil Vata - - Pitta + Kapha +
- Salt Vata - - Pitta 0 Kapha +
- Black pepper ground (Vata - Pitta + Kapha - -)
